An Ode to Soup

The weather is cooling. The dark is descending earlier and earlier. People are decorating their houses with pumpkins . . . And I am making soup!

Soup is, as Campbell’s says it, good food. It’s easy to make; it’s healthy and good for you; it goes excellently with crusty bread, and best of all it fills your chilly tummy with warm cozy YUM!

When The Summer of Firsts and Lasts came out in May, we celebrated with ice cream. Now that the book is approaching its half birthday (6 months of SoFaL–yay!), I’m planning on celebrating with soup. Maybe not every day, but hopefully every week.

Here’s how we’ll get started:

White Cheddar Beer Cheese Soup

1/2 c. all-purpose flour
1/3 c. butter
1 garlic clove, pressed
1 Tbsp. grated onion
1 tsp. Worchestershire sauce
1/2 tsp. salt
1/2 tsp. dry mustard
1/8 tsp. white pepper
3 c. chicken broth
1 1/2 c. half and half
1 c. beer
16 oz. (4 cups) shredded sharp white Cheddar cheese

In large saucepan, melt butter; stir in flour. Cook 1 minute, stirring constantly, until smooth and bubbly. Add garlic, onion, Worchestershire sauce, salt, mustard and pepper; blend well. Gradually stir in chicken broth, half and half, and beer, and cook until thickcned, stirring constantly. Add cheese; stir until melted.

Heat gently, stirring frequently; do not boil. Garnish each serving with buttered croutons, popcorn, or parsley. Makes 7 (1 cup) servings.

    Yes! Soup season! Autumn of soups and stews.That recipe looks delicious. Last night I was seized by the stew muse and made beef stew.

    Thanks, Mary! Stew sounds fantastic too, though I do lack a crock pot which I hear makes that better. Hopefully I’ll be able to provide more inspiring soup recipes for you!
